Each £8 venison shank weighs approximately 500–800g.
As this is a natural product, shank sizes vary.
If smaller shanks are available, we will supply two shanks to make up the weight — typically 2 × 350–400g.
Your venison shank is delivered fresh, vacuum-packed and ready to cook.
It can be used immediately or placed straight into the freezer for later use.
Venison shank is best cooked low and slow to break down the connective tissue.
Recommended method:
Brown well to develop flavour
Braise gently in stock, wine, or tomatoes for 2.5–4 hours
Finish with herbs such as thyme, bay, rosemary, or juniper
Perfect served with mashed potatoes, polenta, or seasonal root vegetables.
