It can also be placed straight into your freezer if you’d prefer to store it for later.

For best results, defrost slowly in the fridge before cooking.

How to Cook a Venison Saddle Joint

Venison is best served pink and rested properly.

Simple Roast Method:

1. Remove from the fridge 30–45 minutes before cooking

2. Season well with salt, pepper, garlic, and fresh herbs

3. Sear in a hot pan to colour all sides

4. Roast at 180°C for approx. 20–25 minutes per 500g

5. Remove when the centre reaches medium-rare

6. Rest for at least 10–15 minutes before carving

Serve with seasonal vegetables, rich gravy, or a redcurrant or juniper sauce.
