Our Whole Venison Shoulder is a true centrepiece cut - the entire front shoulder of the deer, expertly boned, rolled, and tied by our skilled butchers. This is slow-roasting perfection that rewards patience with incredibly tender, flavourful meat.
The shoulder is one of the most flavourful cuts on the deer. Because it's a working muscle, it has slightly more intramuscular fat than the ultra-lean haunch or loin, along with connective tissue that breaks down during slow cooking. This creates melt-in-your-mouth tenderness and rich, deep flavour that develops beautifully over time.
Boned and rolled for your convenience: We've done the hard work for you - the shoulder is completely deboned, neatly rolled, and tied, making it easy to carve and ensuring even cooking throughout.
This cut loves low and slow cooking - think Sunday roasts with all the trimmings. Roast at a lower temperature than you would a haunch joint (around 160°C/320°F) for 25-30 minutes per 500g, plus an extra 30 minutes. The result? Tender, succulent meat that falls apart at the touch of a fork.
